Forget all that you know about sweet wines and aszú this is going to be something completely different. First a lovely sparkling wine to awaken your senses and then you can immerse yourself in the taste of the aszús and the crowning glory is the tasting of the Eszencia.

The amuse bouches are selected and prepared by Sándor Kerekes, Head Chef of Gléda Restaurant and owner of Őshonos Delikát.

Since last year our national treasure, Tokaj Aszú is internationally celebrated on the December 10. Hopefully this is another step in the direction of re-establishing the glory of the “wine of kings, king of wines”.

On December 10 the Keszthely wine shop of Pampetrics Borkereskedés celebrates Aszú Day by offering a very special tasting of Tokaj aszús starting at 19.00. Six different 6 puttonyos aszús will be presented. To complement the tasting guests will be offered bites to partner the aszú wines: blue cheeses, duck liver and foie gras patés.

TOKAJ ASZÚ IN RUST

The first Tokaj Aszú Day was celebrated on 10 December 2017 and the aim was to turn the spotlight again on this excellent sweet wine whose origin has been protected since 1737. To celebrate the 2nd Aszú Day we have decided to organize a summit meeting in Rust highlighting this historical wine category. The production of sweet wines in Rust (Ruster Ausbruch) has similarly ancient roots as in Tokaj.

Originally the tasting event was to be conducted by Zoltán Sánta our beloved colleague who tragically passed away in September. With heavy heart our dear friend, Judit Bott was kind enough to take over this responsibility. In memory of Zoltán we have arranged a 6 wine flight with sweet wines representing the two regions, that is Tokaj Aszús and Ruster Ausbruchs. The wines will be served with classic blue cheeses as food match. As an introduction to the sweet wines dry furmints, hárslevelűs and their blends will be served. Presentations about the regions and their wines by Judit and Günter will complete the event.

Borkonyha - Dessert to Match Tokaj Aszú

The Michelin-starred Borkonyha in Budapest is halfway between a French bistro and a contemporary Hungarian family-run restaurant. Aptly named – Borkonyha translates as Wine Kitchen – the foundations of this restaurant rest on a wide and flexible wine list, delicious dishes and personal, informal service.

The wine list boasts 200 items most of which are Hungarian – ranging from small cellars with a single hectare to farm to the best known wineries of the country. At any one time there are 48 wines available by the glass. What’s more, at one end of the restaurant there is a huge tempered wine shelf system suitable for storing and aging 1200 bottles and customers can buy the wines just like in a wine shop or they can order any of them to accompany their meals.

The kitchen relies on fresh ingredients, often purchased on the same day and a limited selection of dishes changing on a weekly or biweekly basis which is displayed on a black board. Creative expertise is provided by the head chef Ákos Sárközi.

To celebrate Aszú Day the restaurant recommends a 2013 6 puttonyos Tokaji Aszú from Barta Pince in Mád to accompany their desert called Őszi alma (’Autumn Apple’). The dish containing creme brulée, apple jelly, granola, marinated apples, coffee ganache and apple chips is a perfect match for the aszú.

Textúra: Aszú to accompany desserts

The team of one-Michelin-starred Borkonyha has recently opened a brand new restaurant: Textúra. The goal is to make Textúra a place where you can experience playfulness, experiments and exploration on a daily basis. Their creations rely on domestic ingredients and they bring back older, traditional technologies like parboiling, smoking or confit and all this is mixed with international ingredients and technologies. The result is an experimental cooking style and the quality is guaranteed by Ákos Sárközi the executive chef of both restaurants.

The wine list was created by sommelier Krisztián Juhász and it features wines from Hungary and abroad including special, organic and natural wines to add a bit of spice to the usual selection. Most of the wines are available by the glass.

For this year’s Aszú Day Krisztián Juhász recommends an aszú to accompany an exceptionally exciting dessert: white chocolate mousse with quince jam, marinated celery and celery chips. The 2013 Aszú of Bott Pince displays notes of quince both on the nose and palate and the appealing brightness of the wine gives a lift to the not overtly sweet flavour profile of the dessert.
